Our artisan pizzas
Pizza varies in thickness & toppings depending on the region from an extremely thin base, often with no cornicione (crust edge), to a base wich can be up to 25mm thick, more like a focaccia. Both which are delicious, but we only make the original Neapolitan version which has a thin base & a thick crust edge.
Our pizza dough is proofed for at least 24 hours. This enables flavour & texture to develop slowly & will also produce a puffed light crust which is easily digestible.....so people.....you should never cut off & leave the cornicione!!!
Our pizzas are made in accordance to the strict guidelines of the Associazione Verace Pizza Napoletana www.pizzanapoletana.org.
We hand craft all our pizzas to order. No rolling pins, mechanical dough rollers, pre rolled, pre cooked or pre frozen pizza dough.
Most pizzerias have the usual Quattro Stagione, Capricciosa, Quattro Formaggi etc but it seems that everyone has their own version of toppings. We dont give our pizzas any fancy names, just what the main toppings are & they are either Rosso (with tomato sauce) or Bianca (without tomato sauce).
Our vegetarian pizzas are just as important as the non vegetarian ones so we take the same care using quality ingredients rather than just throwing a few cheap vegetables on. Our vegetarian customers & their money are just as important as everyone elses. Contrary to popular belief, we Italians don't just eat pasta & pizza, much of our diet is actually vegetarian & we dont put garlic in everything.

Our amazing dessert pizzas as these are more modern inventions that have developed in the last 15 years. This includes our Nutella & Mascarpone pizza which we first tasted in Lucca in 2002. Continuous development & innovation is important to us & in recent years, we have also produced some of our own dessert pizzas with fillings such as: caramelised apples, peaches & cream, banana & salted caramel & many more.
We were both born and have always lived in Bedford & another exciting pizza we have developed as an ode to our Italian & English culture & roots is our Bedfordshire Clanger Pizza. This is basically a folded Calzone pizza with a savoury top end with meat, mozzarella, & tomato, then a dessert at the other end with apples or other seasonal fruit.
