La Baracca is the italian word for a shack, shed or barn which you can see from our trailer, that we designed & built ourselves, looks like the inside of a shed or shack where an italian family would often prepare & store food, make & keep wine & sometimes have an open fire or wood oven to cook for family parties.
The pizza oven is an integral part of making proper pizzas & is just as important as the pizza itself. This includes the refractory material used, shape, insulation, size, cooking floor, temperature, flue & the type of seasoned wood used.
Our oven is made of the highest quality refractory materials & is properly insulated with 125mm of high density ceramic insulation to ensure minimum heat loss. Therefore, our oven will burn less wood, stay hot longer & achieve a higher temperature of approx. 400c which produces a blast of high heat to form a proper Neapolitan crust edge to lock in flavour & moisture, cooking the pizza in just 90 seconds. Our oven was made by The Stone Bake Oven Company www.thestonebakeovencompany.co.uk & is one of the few companies in the UK that produce & sell ovens that are approved by DEFRA.
We only use quality seasoned wood from sustainable sources.
